I made this recipe by Jamie Oliver, although not on rosemary sticks, but they still looked really nice:
The recipe calls for a cilantro-scallion-garlic-olive oil marinade for the chicken, and blanched & sliced zucchinis to weave around the chicken on the skewers.
Unfortunately, cilantro still hasn’t grown on me. I always think that this time, in this recipe, I’ll finally turn the corner, just as I have with so many other ingredients. Didn’t happen here, though. So if I made this again, I would use parsley or dill. I might also try mixing in yogurt to the marinade instead of olive oil.
Despite the cilantro, I will happily eat the leftovers :)
